Kale and Pomegranate Salad
Ingredients
• 1 large bunch kale, stems removed, finely chopped
• 1 cup pomegranate seeds
• 1 crisp apple wedged
• ½ cup walnuts, lightly toasted and chopped
• ¼ cup red onion, thinly sliced
• ¼ cup crumbled goat cheese (optional)
Dressing
• 3 tbsp extra-virgin olive oil
• 1 tbsp fresh lemon juice
• 1 tbsp apple cider vinegar
• 1 tsp Dijon mustard
• 1–2 tsp raw honey (optional)
• 1 small garlic clove, minced
• Salt and pepper to taste
Instructions
Whisk dressing.
Add chopped kale to a large bowl and pour in half the dressing.
Massage for 1–2 minutes until softened.
Add pomegranate, apple, nuts, red onion, and goat cheese if using.
Toss with remaining dressing. to taste.
