Black-bean Brownies
Fudgy, flourless black-bean brownies
Ingredients
2 C black beans
2 whole eggs
3/4 C cocoa powder
3 Tbsp coconut oil
1/4 tsp salt
1 tsp vanilla
1/2 C sugar or equivalent of choice
1 1/2 tsp baking powder
Directions
Grease the muffin pan with coconut oil or use a sprayed muffin liner.
Add all ingredients to a food processor. Process until fully blended.
Scoop equally into the muffin pan. (I use a 1/4 C ice cream scoop.)
Sprinkle with coarse salt before cooking.
Bake in preheated 350F oven for 20 min (no longer). Do not over cook.
Let cool before taking out of the pan.
Freeze or eat within a week.
Optional
You can add sugar free chocolate chips for texture. Both on top or blended in.
