Homemade Chicken Bone Broth

Ingredients

Leftover Chicken (with bones!)

Your choice of Leftover Veggie and herb cuttings, such as:

Zucchini

Celery

Carrots

Onions

Parsnips

Rutabaga

Sweet Potatoes

Bell peppers

Hot peppers (if you want it spicy!)

Garlic

Thyme

Rosemary

Salt and Pepper

Directions

Place all your leftover ingredients into a large pot or Dutch oven. Fill with filtered water. Let it simmer with low/ medium heat for an hour or two on the stove. Season with salt and pepper to your liking.

Leaving plenty of room at the top for expansion, fill canning jars with broth and cool completely in the refrigerator before transferring to the freezer.

Notes

Our family saves our leftover rotisserie chicken bones, veggie scraps, and dried herbs from our garden in a bag labeled “broth bag” in the freezer every month. It’s a great monthly use of our leftovers, which can be composted right afterward. When your broth cools, it may have a gelatinous consistency - which is ideal! Use it for soups, stews, or as a warm, comforting drinking broth.
