Pumpkin Bread

Ingredients:

  • 2 large eggs
  • 3/4 cup unsweetened sunflower seed butter or tahini
  • 1/2 cup grade B maple syrup or honey
  • 1/2 cup pumpkin puree
  • 3 tbsp soft ghee, coconut or palm oil plus more to grease pan
  • 2 tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup arrowroot powder
  • 1-1/2 tbsp ground cinnamon
  • 2 tsp ground nutmeg
  • 2 tsp grain-free baking powder
  • 1/2 tsp grated lemon zest
  • 1/2 tsp ground ginger
  • 1/4 tsp sea salt

Instructions:

  1. Preheat oven to 350.
  2. Lightly grease an 8-1/4 by 4-1/2 inch loaf pan.
  3. Place a piece of parchment paper on bottom of pan.
  4. In a high-speed blender/food processor, combine eggs, sunflower butter, maple syrup, pumpkin puree, oil or ghee, lemon juice and vanilla.  Puree until smooth and creamy, about 30 seconds.
  5. Add arrowroot powder, cinnamon, nutmeg, baking powder, lemon zest, ginger and salt.  Blend for 30 seconds until well combined.
  6. Pour batter into prepared loaf pan.
  7. Bake 60 minutes, until toothpick inserted in center comes out clean.
  8. Remove loaf from oven and allow to cool for 15 minutes before removing.
  9. Allow to cool completely before eating.

Delicata Squash Rings

Ingredients:

  • Delicata squash
  • 1-2 tbsp. coconut oil
  • Salt and pepper to taste

Instructions:

  1. Cut delicata in half shortways and remove both stem ends.
  2. Remove seeds with a spoon and slice into 1/4 inch slices.
  3. Arrange on a cookie sheet and drizzle with liquid coconut oil, then toss to coat.
  4. Sprinkle with salt and pepper.
  5. Bake at 400 for 30-40 minutes, turning halfway through cook time.

Tip:

Try adding a sprinkle of cinnamon to enhance the sweetness and help balance blood sugar.

Apple Crisp Paleo Style

Ingredients:

  • 6 medium or 8 small apples, peeled and cored and sliced
  • 2 cups almond flour
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup grapeseed or coconut oil
  • 1/8 cup honey
  • 1/2-1 tsp stevia powder
  • 1 tbsp vanilla extract

Instructions:

  1. Put nutmeg, cinnamon, salt and almond flour in a medium mixing bowl
  2. In separate small bowl, mix oil, honey, vanilla and stevia until blended
  3. Combine contents of both bowls
  4. Put apples in 2 quart baking dish and crumble topping evenly over them
  5. Cover and bake at 350 degrees for 45-60 minutes until golden brown

Tips:

I’m a huge “freegan” and I’ve recruited Francie to the cause…we found these apples falling unused to the ground in an apartment complex we were passing over the weekend.  We stopped and scrounged up a bag and loaded up.  It was encouraging to see all the bug damage, because it let us know that they were safe for us to eat too (not to mention the extra protein they provide 🙂 ).  This recipe tasted great, but was even better with a little full fat coconut milk dribbled on.  -Patty

Chocolate Chip Cookies (Dairy Free/Gluten Free)

Almond Meal Choc Chip Cookies

Ingredients

  • 2 ½ cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup grapeseed oil
  • 1 tablespoon vanilla extract
  • ½ cup agave nectar
  • 1 cup chocolate chunks

Instructions

  1. Combine dry ingredients in a large bowl and stir together wet ingredients in a smaller bowl.
  2. Combine the two bowls.
  3. Form 1-inch balls and press onto parchment paper lined baking sheet and bake at 350 for 7-10 minutes.  Set a timer because the time goes fast…mine got a little too done!

Bug Bites – Healthy No Bake Cookies

Ingredients

  • 3/4 cup virgin coconut oil
  • 3/4 cup cocoa powder or carob powder
  • 1/4 cup almond butter
  • 1/8 cup honey
  • 1 Tbsp vanilla
  • 1 tsp almond extract
  • 1/2-1 tsp stevia powder
  • 1/2 cup flaxmeal
  • 1-1/2 cup coconut, unsweetened
  • 1/4 cup finely chopped almonds
  • 1/2 cup finely chopped pumpkin seeds (whiz up in a coffee grinder)

Instructions

  1. Combine first 7 ingredients in one bowl (it’s a great idea to taste now and tweak if needed)
  2. Put remaining ingredients in a separate bowl
  3. Combine the 2 bowls and mix well.
  4. Drop onto a cookie sheet or wax paper and freeze.
  5. Once solid, transfer to a Ziploc bag for storage and keep frozen. FYI, these “cookies” lose their shape if they reach room temperature.

Bonus info

  • Coconut oil and flesh are great anti-fungals and provide medium chain triglycerides that burn rapidly in the mitochondria of the cell.
  • Pumpkin seeds are a gentle anti-parasitic
  • The high fiber content provides a food source for friendly bacteria in the intestines.
